A Fèis Ìle 2025 (Rock'ndaal) limited edition of 2,500 bottles, Octomore Polyphonic is the oldest Octomore expression ever released at 15 years old, combining spirit from iconic past releases (Octomore 6.3, 8.2, 8.4, Event Horizon) further aged in cask, alongside two never-before-released single casks — a 2005 first-fill Grenache and a 2009 second-fill Sauternes — with peat levels ranging from 162.6 to 258 PPM across the components.

NOSE
The influence of oak is immediate, with quality French and American oak casks evoking sweet cinder toffee, vanilla fudge, dark chocolate and a pinch of sea salt; burnt orange mingles with waves of barbecue smoke, subtle hints of liquorice and ripe cherry, with delicate honeysuckle adding a touch of elegance.
PALATE
Beautifully rounded and smooth, notes of freshly baked pastry, golden syrup and freshly ground coffee come to the fore, with a subtle minerality evoking sea salt, warm sand and beach bonfire smoke as a true sense of place, complemented by mellow toasted oak.
FINISH
Soft seasoned oak settles as elegant peat smoke and waves of sea spray linger.
